Le Chef
If some of Calgary’s finest French cuisine is what you have in mind, you’ve come to the right place. Chef Shaun Desaulniers has culinary achievements that span the globe – he was on a team of chefs who were named world champions in Scotland in 2005. Since then, Chef D has worked for numerous luxurious hotels, including the Fairmont Palliser, where he was chef and coach. In other words… you are not likely to leave his table unsatisfied.

Belgo offers up traditional French cuisine with a hint of Belgian flare.Specialties include popular Belgian favourite, moules & frites (mussels and fries), served with several choices of preparations. Other menu highlights include cabernet braised Quebec veal shank, or a slightly lighter choice, Croque Monsieur, a grilled sandwich with maple pepper ham and gruyere cheese. For dessert, it’s hard to resist the tantalizing Creme Brulee Napoleon with seasonal fruit. On Thursdays, Friday’s and Saturdays, Chef D offers the ‘Chef’s Bar’ – a seven-course meal chosen by the Chef and prepared in view at an open-kitchen. Make sure you reserve ahead for this pricey, decadent treat.
