An Elegant Place, Inside And Out
Rustica is a high end restaurant located in the Timbers Clubhouse at the Silvertip Resort in Canmore. The building is a Douglas fir timber frame structure with a cathedral ceiling. The room has warm wood finishes, a large Rundle stone fireplace, large windows, and a wrap around veranda so patrons can enjoy the spectacular vistas of the surrounding Rocky Mountains. The restaurant serves fine cuisine, prides itself on exemplary service, and has a wine list that befits the quality of the food. Reservations are recommended. Private parties are invited to celebrate special occasions on advance notice.

The Appetizers Are Called Great Beginnings
The menu of appetizers includes such temptations as proscuitto wrapped shrimp; quail saltimbocca – quail marinated in saltwater, served with a topping of procuitta and sage; fois gras au torchon; venison carpaccio; seared scallops with caramelized cauliflower; and porcini mushroom capellini, a house made pasta dish.

Main Courses
The entrées at Rustica are diverse. Try lamb “three ways”, consisting of a mini rack, lamb Wellington, and braised shoulder. Or perhaps salmon en croute, stuffed with artichokes, tomatoes, and fresh basil. Maybe a roasted game hen with leek and pistachio bread pudding, or a beef tenderloin with mushroom crepe, fois gras, and truffle port wine sauce. The menu changes regularly at Rustica, so other delicacies might confront you when you next visit. It is an elegant location for all occasions.
